Quiche Lorraine (from French “quiche Lorraine”, Lotharingian Pie), or simply Quiche (from French “quiche”) is a course that became widespread out of French cuisine.

It is an open-faced pie with base made of cookie dough and a dressing made of eggs, cheese, milk/cream and Gruyere cheese mixed with hashed smoked breast cubicles.

Quiche is one of the dishes that can be eaten both in hot and cold state. It will fit equally good for any feast, be it a breakfast, a dinner or a supper. The story of Lotharingian pie begins in Medieval Germany, Lotharingian region in particular, which was a German-French region. Back when German kings rule the Lotharingian region, witty German cooks didn’t want to waste bread dough that they usually did, so they made a pie base out of it, added some hashed mushrooms and ham into it they found among the kitchen leftovers, dressed it with a mix of eggs and cream and baked it. Germans named the result Lothringer Kuchen, while the French who populated the region and tasted the pie, changed plain dough to cookie dough and added their beloved cheese to it. Also, they’ve changed the German name to a French one – “quiche Lorraine” – Lorraine pie. 

The course has then become widespread around France. This has originated many variations of it. Today the dough for a quiche may be made of laminated dough and can be stuffed with anything from low-cal vegetables and fish to meat and mushroom options with different types of cheese.
